Salsify Tragopon Porrifolius

Salsify is an old fashioned vegetable with a pretty flower. Can be grown for the flowers alone as it is perennial, or can be dug up for the parsnip- like roots after the plant has flowered. Cook like parsnips and carrots. It is very hardy, but water well in spring. The seeds come on a large thistle- like head and easily spread and disperse.
